Happy Friday, friends! It’s going to be a HOT ONE this weekend and today I am sharing my Easy Breezy Pineapple Cooler Recipe with you. I made them last weekend for my summer home tour shoot of our outdoor patio and they hit the spot. (You can see that tour HERE.)The heat index Saturday is supposed to be over 100 degrees, holy hot tamales!! Maybe you’ll want to make a cool drink too!
This is easy because it’s only 4 ingredients and breezy because it will make you feel like a cool breeze just brushed by after being out in the heat! You can also make this alcoholic or non-alcoholic. It’s also not overally sweet, which I prefer, but to sweeten it more you can add agave nectar, honey, or simple syrup.
Now to the kitchen…
Since I use fresh limes, I wash them before I slice them.
I chilled my pineapple in the fridge the day before so it was nice and cold.
Pineapple is so easy to cut. Remove the top. Quarter it length-wise and remove the core from each slice. Then, just cut off the rind.
Cut into chunks and then add to your blender.
Next, add your coconut milk. It compliments the pineapple nicely.
Add in your rum and ice. You can omit this if you want to keep it non-alcoholic.
Squeeze in your lime juice and blend!
That’s it! Super easy, right? I love fresh fruit this time of year, but you can use frozen pineapple chunks and bottled organic lime juice if you want to speed up the process even more.
I like to garnish mine with a lime wedge and pineapple slice.
Ingredients
- 4 cups chilled pineapple chunks
- 2-3 limes, juiced
- 1/3 cup coconut milk
- 1/3 cup rum
- 1 1/2 cups ice
- *sweeten with agave nectar, simple syrup, or honey per glass to taste (optional)
Instructions
- Add all ingredients to blender.
- Crush ice and then blend.
- Sweeten if needed.
- Garnish with a lime wedge and pineapple slice.
- Enjoy!
I hope you all have a wonderful weekend! I’ll be whipping these up again for the heat wave and going to probably live at the pool Saturday and Sunday. I don’t know, it might be a good weekend to catch a movie and avoid the sticky hotness! I’ll be back next week with some bedroom makeover progress…
